When we butcher our chickens we cut off the breasts, legs and thighs and freeze them in bags then I take the carcasses that are left and cook them in water / onions / parsley for a long time. I let it cool and then pick off all the meat that hasn't already fallen off and can it. It's mostly tasty broth with about one cup of meat per jar and is great for homeade chicken noodle soup. Canned beef / venison is really good too!

We can chicken too but we don't cook it before. just put the breasts in the bottles (even whole it will shred easily when you use it) and a bit of salt or bullion and cook. I can't remember the times though! If you looked it up online I bet you can find it.

It's great for Chicken enchilada's or chicken salad or we add it to bottled Parmesan sauce for a way fast meal.

I would love to have fresh meat - I've heard way too many horror stories about the stuff you buy in the store. Raising chickens was never something I though I would want to do, but the idea is more and more appealing. Good for you!

good idea to can chicken. I don't have a pressure cooker, and I would be scared to eat canned chicken. But It's a neat idea.

Canned chicken is so convenient for recipes. We actually raise meat chickens for both freezing and canning.
