Paninis without the Panini

I go between craving salads and sandwiches.

Sandwiches are the thing right now. I like my sandwiches hot, with melty cheese and gooey creamy dressing…

But I don’t have a panini grill.

A waffle iron works just as well.

And instead of those vertical grill lines, you get a checkerboard. It’s so much more fun.

I’ve been having several of these sandwiches a day (they’re small, people) and …YUM. The meltiness comes from top and bottom so it’s perfect.

On this sandwich, I used a pesto/sour cream dressing (YUM), sliced avocado and tomato, Muenster cheese, and sprouts.

Several a day.

Sounds yummy. I really like avocado – I am so glad they are a healthy food.

Not homemade bread, artisan from Smiths. It’s really good though, probably the same thing they have at Costco. And I just mix a little bit of pesto and sour cream – that’s it!

great idea, I actually have way to many cooking gadgets in my kitchen, and this is a great way to use a gadget for multiple purposes, and now I am hungry for a gooey sandwich with cheese, yum!
