Taco Soup

½ lb. Lean ground beef
½ medium onion, chopped
1 clove garlic, minced
1 T. chili powder (mild)
½ t. salt
½ t. paprika
1 t. cumin
¼ – ½ t. red pepper flakes
2 t. cornstarch
2 14½ oz. cans diced or stewed tomatoes
1 15½ oz. can pinto and/or black beans
1 can corn

Brown ground beef in large saucepan with onion and garlic. Drain excess grease. Combine salt, spices, cornstarch, and tomatoes. Add tomato mixture and beans to meat mixture and simmer for 10-15 minutes. Add frozen corn and heat to serving temperature. Adjust seasonings (I usually add just a pinch more of everything). Serve with tortilla chips and garnish with cheese, sour cream, olives, and green onions.

Yield: 4-6 servings
