Freezing Fruits and Vegetables

Don’t forget about the Halloween giveaway, going on now through Saturday at midnight! Five people will win 5 fun Halloween/fall prizes, so don’t forget to enter by leaving a comment on this post.

garden fresh tomatoesI just bought some peaches at Allred’s Orchards in Provo – two whole box (about 40 lbs) for $12. I think that’s a pretty good deal. Now all I need are some canning jars. Do you have some you’d be willing to part with? If you live in Utah County, let me know…

A few weeks ago I ran into a neighbor who was carrying a bucket of tomatoes from her garden. She told me that she freezes a good portion of her garden produce rather than canning it because it’s faster and easier, especially if you plan on using the food within a few months.

If you’re interested in trying freezing and you’re not quite sure how to go about it, click here and here for instructions, recipes, and other useful information.

Any other great ideas for what to do with excess garden produce? Please leave a comment and share!

  1. I freeze about 1/2 my tomatoes each year. Cherry tomatoes for sauce and regular tomatoes for soups and stews. It is a timesaver and no cooking/canning in the heat which I surely appreciate.

  2. I love to freeze veggies. It takes up less space than canning and is so much easier.

  3. I freeze strawberries!! You lay them on a cookie sheet…single layer and put them in the freezer for alittle while, then put in a freezer bag. They stay nice for when you are ready for them!!! I would love to have a garden, but down here (Florida) the soil is yuk!

  4. I freeze, can, and dry a lot of our home-grown produce…If you have access to a dehydrator I really recommend trying out your own fruit leather (and raisins)…my kids LOVE it!
BTW-I just bought a bunch of bottles from Smith’s…they were clearing out all of their canning supplies-so check there first! Good Luck! ;)

  5. I love this time of year and canning. We have just moved so it was difficult to do much canning in the midst of packing and unpacking, but we did manage to can a little bit of stuff. I love opening the jars and making dinner and knowing how my hard work throughout the summer has paid of and that I am doing something good for my family.
