Mom’s Sugar Cookies

1 c. butter
2 c. sugar
6 eggs
1 t. vanilla
6 c flour
2 T. baking powder
1 ½ t. salt
Refrigerate for 2 hours; Bake 8 minutes at 375 degrees. (Wherever possible I substitute butter for shortening and then only use half of the recommended amount. I also use only 2/3 of the sugar. Cutting out butter and sugar make cookies much less unhealthy. But that doesn’t mean you can eat more!!!)
Yield: approximately 3 dozen
Grandma’s Cream Cheese Frosting
¼ c. butter, soft
4 oz. cream cheese
1 ½ c powdered sugar
½ t vanilla
(You can half the butter even in a frosting recipe, but it changes the texture a bit because there isn’t as much liquid. I usually use all the butter in frosting recipes.)
OR if you don’t like cream cheese frosting, which is my favorite kind, here is an alternative.
Buttercream Frosting
1/3 c. butter
3 c. powdered sugar
1 ½ t. vanilla
2 T milk

Can you tell me – how much sugar and how much butter do you use in this recipe with your modifications? I’m thinking one cup butter (instead of the 2 cups shortening) and then 1 1/3 cup sugar. Is this right? I’m excited to try making homemade circus cookies and we don’t have a favorite sugar cookie recipe so thought it would be good to try it all your way! :) Look forward to your answer! The kids are gonna love making these cookies this weekend! :)
These are sooooo cute like this! You could do this for so many things! AND you could stamp the acetate box with a simple sentiment in the front if you wanted to as well!!! LOVE IT!
