Monday: Pita Pizza

Pizza sauce

1 qt. tomato sauce
1 T. oregano
1 t. salt
1 T. sugar
1/2 t. garlic powder
1 t. basil
1/4 t. pepper

Makes enough sauce for 1 pizza (jelly roll size)

Making pizza together is a great family fun activity – Let each member good his or her own mini pizza. This means less work for Mom and less “Ew, I don’t like olives!”

Tuesday: Mac’n’Cheese

Salt
2 c. uncooked macaroni
12 oz. can 2% evaporated milk
3/4 c. 2 % milk
1/4 t. dry mustard
1/8 t. garlic powder
Pinch of cayenne pepper
2 t. corn starch
2 c. shredded chedar cheese

Bring 2 1/2 c. water to boil in a large sauce pan. Stir in 2 t. salt and the macaroni; cook until pasta is completely cooked and tender. Drain the pasta and leave in colander; set aside.

Add evaporated milk, 1/2 c. of the 2% milk, mustard, garlic powder, cayenne, and 1/2 t. salt to the now empty saucepan.

Bring the mixture to a boil, then reduce to a simmer.

Whisk the cornstarch and remaining 1/4 c. milk together, then whisk it into the simmering mixture. Continue to simmer, whisking constantly, until sauce has thickened and is smooth, about 2 minutes.

Off the heat, gradually whisk in the chedar cheese until melted and smooth. Stir in the macaroni and let the macaroni and cheese sit off the heat until the sauce has thickened slightly, 2-5 minutes before serving.

Wednesday: Egg McMuffins

Scrambled eggs
English muffin or toast
1 slice of cheese
2 slices of ham sandwich meat
1 slice of tomato
2 slices avocado
Ketchup/miracle whip/mayonnaise

English muffin or toast
Slice of cheese
Sandwich meat
sauce

Thursday: Stir fry with Roast Beef

2 c. uncooked rice
1 bag frozen stir fry veggies
1/2 c. Yoshida’s sauce (from Costco)
1 can Roast Beef (from Costco)

Friday: Spaghetti

1/4 lb. ground beef
2 T. onion, chopped
1 clove garlic, minced
1 8-oz. can tomato sauce
1 14.5-oz. can diced or stewed tomatoes
1 t. sugar
1/2 t. crashed oregano
1/2 t. Italian seasoning
Salt and paper to taste
6-8 ounces spaghetti noodles, cooked and drained.

Brown ground beef in skillet. Drain excess grease. Add onion and garlic and cook until onion is soft. Stir in tomato sauce and tomatoes. Add seasonings and summer on low heat for 15-20 minutes. Adjust seasonings. If desired, sauce may be thickened with a mixture of 2 t. cornstarch and 2 T. water. Serve over hot cooked noodles.

Yield: 4 servings.

Saturday: French Toast

4 large eggs
1/4 t. cinnamon
4 slices bread

For a slight variation, add 2 T banana, pineapple, sweet potato, carrot, or butternut squash puree or canned pumpkin.

Sunday: Cheesy Potato Casserole

4 c. cubed and cooked potatoes
10 3/4-oz. cream of chicken soup
2 c. shredded chicken
1 c. sour cream
1 c. shredded cheese
1/2 t. garlic salt
1/2 t. salt
1/2 t. pepper

Cook potatoes and then combine with other ingredients. Cook in crock pot on high for 4 hours or in the oven at 350 degrees for 20 minutes or until bubbly.
