Bean Week

About every 5 or 6 weeks, we have what we call “Bean Week.” I grew up eating pinto beans for dinner about this often, and it’s a tradition I’ve carried into my own family. Beans are delicious, versatile, healthy, and (my favorite) EASY!

We cook up the beans and have “beans in a bowl.” We eat the whole beans straight from the pressure cooker. “Beans in a bowl” is fun because everybody likes theirs a little bit different. We put lots of condiments out and every one fixes their own beans just the way they like them. For example, we have rice, salsa, dressing, lettuce, chips, cheese, olives, hot sauce, guacamole, and corn. Hmmm, I’m getting hungry just thinking about it!

After dinner that first night, I mash most of the beans with a hand blender. For the rest of the week, we have a different bean meal each night. We have tostados (corn or flour), burritos (toasted, microwaved or enchilada style), enchiladas, taco soup, and haystacks.

Bean week is great because planning the weekly menu is easy and all these different meals are delicious and healthy!
